Ingredients:
2 large eggs (for a richer taste, go to your local farmers market and get duck eggs!)
1 cup grated zucchini
1/2 cup mayonnaise (or substitute for 1/3 cup vegetable oil + 1/2 cup applesauce)
1 teaspoon vanilla extract
1 1/2 cups all purpose flour
1/2 teaspoon ground cinnamon
1 cup granulated sugar
1/4 cup packed light brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Instructions
Preheat oven to 350*F
Butter a 9x5" loaf pan (or spray with cooking spray)
In a large bowl, combine the sugar, brown sugar, and stir in the mayonnaise, eggs, and vanilla. Whisk until well combined, then fold in the zucchini
Stir in the salt, cinnamon, baking powder, and baking soda, salt.
Stir the the flour in little by little so it's manageable and to not over mix
Pour batter into the pan and bake for 50 minutes
Insert a toothpick into the center of the bread to ensure fully cooked
Let bread cool in the pan for 5 minutes before transferring to a serving tray
